Clean and pat the whole sea bass dry. Make several shallow diagonal cuts across both sides of the fish so it cooks evenly and absorbs more flavour.
Trim and lightly crush the lemongrass to release its aroma, then arrange it with the sea bass on a heatproof serving plate.
Place the fish in the LumiBake S1 Pro 18L, select Steam, and steam at 100°C for 30 minutes, until the flesh is opaque, tender and cooked through.
While the fish is steaming, place the garlic, shallots, coriander, red chilli, green chilli, lime juice, fish sauce, sugar and water in a blender. Blend until everything is finely chopped and combined into a fresh, slightly textured Thai lime sauce.
Carefully remove the steamed sea bass from the oven. Spoon the freshly blended lime sauce generously over the hot fish, allowing some of the sauce to run into the diagonal cuts and around the plate.
Finish with fresh lime slices and chilli if desired, then serve immediately while the fish is hot and tender. Spoon the extra lime sauce from the plate over each portion when serving.
