Instructions

| Bake the peanut cookies | LumiBake S1 Pro 18L | Bake | 160°C | 15–20 min |
01Sift 150 g of flour and 60 g of icing sugar into a large mixing bowl so the dry ingredients are fine and evenly combined.
02Add 130 g of crushed peanuts, 75 g of peanut butter and 70 ml of peanut oil to the bowl. Mix until the ingredients begin to come together.
03Knead the mixture gently until a cohesive dough forms. The dough should hold together when pressed without feeling overly wet or sticky.
04Divide the dough into evenly sized portions and roll each piece into a smooth ball. Arrange the balls on a lined baking tray with a little space between them.
05Gently flatten each dough ball and press a simple pattern into the centre using a straw or similar small round tool.
06Brush the tops lightly with egg yolk liquid. Preheat the LumiBake S1 Pro 18L, then Bake at 160°C for 15–20 minutes, until the cookies are lightly golden and the tops look set.
07Carefully remove the tray and allow the cookies to cool before serving. They will become crisper and more crumbly as they cool.
