Instructions

| Steam the yam | LumiBake S1 Pro 18L | Steam | 100°C | 25 min |
01Peel the yam and cut it into evenly sized sections. Arrange the pieces in a single layer on a steaming tray so they cook evenly.
02Place the tray in the LumiBake S1 Pro 18L, select Steam, and cook at 100°C for 25 minutes, until the yam is completely tender and can be easily pierced.
03Transfer the steamed yam to a mixing bowl while still warm. Add the sugar and milk, then mash thoroughly until smooth, creamy and free of large pieces.
04Spoon the yam mixture onto the centre of a serving plate. Use a spoon or spatula to build it upward into a tall mountain shape, creating textured ridges over the surface.
05Drizzle the osmanthus syrup generously over the yam mountain, allowing it to flow naturally down the ridges and collect slightly around the base.
06Scatter the mixed nuts around the base and over the dessert for crunch, then finish with lime before serving. Serve while fresh for the best creamy texture and floral aroma.
