Add 20 g of caster sugar and 2 g of dry yeast.
Pour in 20 g of melted butter.
Add 90 g of warm milk at approximately 37°C.
Mix the ingredients until a rough, shaggy dough forms.
Knead the dough until it becomes smooth and evenly combined.
Shape the dough into a ball and place it in a clean bowl.
Cover the bowl securely with plastic wrap.
Place the bowl in the LumiBake S1 18L. Select Yogurt (Ferment) mode and ferment at 45°C for 20 minutes.
Remove the dough after fermentation and gently press it to release excess air.
Roll the dough into a large sheet approximately 2 mm thick.
Trim the dough into a neat rectangular shape.
Cut the dough into smaller rectangular sections.
Cut each section diagonally to create long triangular pieces.
Roll each triangle from the wide end towards the pointed tip to form a croissant shape.
Arrange the shaped rolls on a parchment-lined baking tray, leaving space between them.
Cover the tray with plastic wrap and allow the rolls to stand at room temperature for 15 minutes.
Remove the plastic wrap and brush the surfaces evenly with beaten egg yolk.
Sprinkle white sesame seeds over the tops.
Place the tray in the LumiBake S1 18L. Select Air Fry mode and cook at 160°C for 20 minutes.
Remove the rolls when evenly risen, glossy and golden brown.
Allow them to cool slightly before serving.
