Peel the potatoes.
Cut the potatoes into evenly sized slices.
Arrange the potato slices in a shallow oven-safe dish or steaming tray.
Fill the water tank of the LumiBake S1 Pro 18L.
Place the potatoes in the oven.
Select Steam mode and cook at 100°C for 30 minutes.
Carefully remove the potatoes after the steam has safely dispersed.
Transfer the steamed potatoes to a large mixing bowl.
Mash the potatoes until smooth.
Add salt according to taste.
Season with ground white pepper.
Mix thoroughly until the seasoning is evenly distributed.
Peel and clean the shrimp, leaving the tails attached.
Beat the egg in a small bowl and set it aside.
Take a portion of mashed potato and flatten it into a thick patty in your palm.
Place one shrimp in the centre, keeping the tail exposed.
Add mozzarella cheese beside or over the shrimp.
Fold the mashed potato around the filling.
Press and roll it into a compact ball, leaving the shrimp tail protruding from the top.
Repeat with the remaining mashed potato, shrimp and cheese.
Coat each ball with a thin, even layer of starch.
Dip it into the beaten egg until fully coated.
Roll it in the breadcrumbs, pressing gently so the crumbs adhere evenly.
Arrange the coated potato shrimp balls on a parchment-lined baking tray.
Lightly spray the surfaces with cooking oil.
Preheat the LumiBake S1 Pro 18L before adding the tray.
Place the tray in the preheated oven.
Select Air Fry mode and cook at 180°C for 15 minutes.
Remove the balls when the breadcrumb coating is evenly golden and crisp.
Check that the shrimp are fully cooked and opaque before serving.
Allow the balls to cool briefly.
Serve warm while the centre is soft and cheesy.
